offer only 100% ARABICA coffee beans. Why? Because
Arabica beans are of a higher quality. They have fewer
yields, and they are grown at higher altitudes than
Robusta beans. Therefore producing a much finer, more
pronounced taste and aroma without any harsh, bitter,
medicine flavors. We 'cup' many different Arabica coffee
beans from around the world in order to choose what we
believe are some of the best. You will really appreciate
all the time and effort put into each and every cup. |
Green
coffee can remained stored for up to 2 years. However,
after coffee has been roasted, it begins losing its
flavor and aromatics within 24 hours. Coffee can lose as
much of 50% of its flavor after three weeks. Ground up
coffee can lose its flavor even more quickly than whole
bean. That is why Sontag's recommends ordering whole
bean coffee, and grinding them just before you brew

Coffee is the world’s second most traded
commodity. It ranks second to only crude oil. 4 out of 5 Americans drink
coffee, consuming more than 400 million cups a day.
Coffee beans crack and expand during the
roasting process. During roasting, a coffee bean will expand to nearly
double its size. The beans release gases and make a crackling noise as they
roast. During the roasting process the beans also lose moisture, making them
about 20% lighter than when you started. Coffee beans are coated with a paper
like membrane, called chaff, which falls off during roasting.
Storage methods for whole bean and
ground coffee. Coffee should be stored in an airtight container or canister
that is opaque. If you plan to store it for longer than three weeks, then you
can put it in the freezer. Coffee’s worst enemies are air, light, and moisture.

Brewing Recommendations.
To get the most flavor, we recommend
you use 7.5 grams or 1 level coffee measure (which is one rounded tablespoon)
for every 6 ounces of water.
